Strawberry Rhubarb Pie

Happy Spring!

If you’ve been into Coffee’s Country Market recently you’ve probably noticed some of our delicious pies in the desert case. One of our Spring favorites is our strawberry rhubarb pie, and now you can make it at home with our very own recipe.

All you need is…

4 Cups Rhubarb

2 Cups Strawberries

1 ⅓ Cup Sugar

¼ Cup Cornstarch

1 Tablespoon Lemon

¼ teaspoon Cinnamon  

9 Inch pie crust

1 Egg

Extra sugar or butter (Optional)

Mix the rhubarb, strawberries, sugar, cornstarch, lemon and cinnamon into a large bowl. Fill the strawberry rhubarb mixture into the pie crust. After rolling out the other piece of dough on top of the pie, brush with egg and sprinkle with some extra sugar on top.

Bake at 350 degrees for 45-50 minutes and enjoy!
